On Monday February the 18th my team and I will be defending our back-to-back Best Bites title. The Houston Livestock Show and Rodeo Best Bites Uncorked! Competition is quickly becoming legendary. Over 200 of the cities best restaurants and Chefs compete against one another creating 3,000 portions of a bite size entrée.
On the menu this year for my team:

3,000 portions of Olde World Farms Flank Steak on Potato Rafts with Salpicon and Cheesy Chevre

3,000 portions of Smoked Oyster shooter with Rio Valley Sitrus Sangrita with Roasted Poblano

3,600 portions of Grand Marnier Brownie bites with Chocolate Ancho Cherry Bombs and candied spicy pecans
