It’s been sometime since my last update. Life sort of has a way of doing that. I’ll be doing more things with the site such as adding Holiday recipes, Face Book Page, Twitter, Etc.

For the third year in a row my team has taken first place in the highly coveted Rodeo Uncorked! Best Bites Competition. With over 4,000 tickets sold for the event it was without a doubt one of the most exhausting and rewarding competitions I have done to date. I manage to find time to take a few pictures. On Monday February the 18th my team and I will be defending our back-to-back Best Bites title. The Houston Livestock Show and Rodeo Best Bites Uncorked! Competition is quickly becoming legendary. Over 200 of the cities best restaurants and Chefs compete against one another creating 3,000 portions of a bite size entrée.
On the menu this year for my team:
3,000 portions of Olde World Farms Flank Steak on Potato Rafts with Salpicon and Cheesy Chevre
3,000 portions of Smoked Oyster shooter with Rio Valley Sitrus Sangrita with Roasted Poblano
3,600 portions of Grand Marnier Brownie bites with Chocolate Ancho Cherry Bombs and candied spicy pecans

I have now completed and added a preview of Soup and Salad to the site. I hope to have the book edited and off to the publisher by the end of the first quarter 08. You can view the preview Here
I recently competed in, and won, the 2007 American Association of Drilling Engineer Cook Off. I represented the company of Cameron Ironworks. You can view the photos HERE.
Although there are no actual pictures of the food the theme of our booth was “Support our Troops” so we came up with a 5-Star MRE (Meal Ready to Eat). The entry was a butter poached lobster tail served over angel hair pasta and topped with a smoked gouda cream sauce. Everything was prepared sous vide, and were dropped in 20 gallon pots of boiling water during the competition.
Over the past few weeks I have worked on adding new information to the website. The additions include a preview of the next book in the series Soup and Salad and the addition of instructional videos which can be found HERE in the Video Section.
